Raspberry and Peach Cashew Yogurt Parfait

This Raspberry and Peach Cashew Yogurt Parfait is a delightfully, sweet non-dairy, grain-free breakfast option for those trying to keep to a Paleo diet. This parfait also serves as a wonderful afternoon snack on a hot summer day or a tasty alternative to dessert.

​I stopped by Whole Foods Market and was really craving something refreshing and sweet. Once I saw these peaches, I couldn't stop thinking about how incredible peaches can be on a hot summer day and quickly began crafting this recipe as I walked the aisles. ​This recipe leverages Forager Project Unsweetened Plain Cashew Yogurt, a dairy-free yogurt alternative, and Paleonola Grain-Free Chocolate Fix Granola. This cashew yogurt has a thinner consistency than regular yogurts, so I highly recommend making your parfait in a low, flat bowl as pictured or layering it in a small bowl or glass. And, let me tell you, this grain-free granola, added the perfect amount of crunch and chocolate flavor to my parfait. 

​I was so excited when I got home with all these ingredients that I couldn't wait until breakfast to make this parfait and actually made it as an afternoon snack. I was so satisfied by how quickly I was able to put this snack together and the medley of raspberries, peaches, and chocolate were the perfect complement to the unsweetened plain cashew yogurt. I plan on ​making this 5 minute recipe for breakfast again tomorrow and look forward to using this recipe when I'm looking to satisfy my sweet-tooth on a warm summer evening.
